During one of our heat waves, we somehow managed to make pot stickers for dinner.
Lucy made the filling and wrapped most of them. She's perfected her wrapping. Take a look at her army of pot stickers.
At the end of the night, we ended up having pot stickers. No rice or other dishes. Just pot stickers. The large griddle was brought out and we fried up the dumplings, after they were boiled for a few minutes.
To cool everyone down, we had shaved ice. My dad used to own a restaurant and had an ice shaver, so the guys (Jimmy, Richard and Andrew) used that to shave the ice.
We also had some grenadine, canned lychee and canned palm seeds (in syrup) to sweeten everything. My first bowl, shown above, only had a bit of strawberry flavoured grenadine.
I don't know why we haven't done this more often. It's so simple and so good!
